Corn flour flavor is an edible flavor used to simulate the aroma and flavor of corn flour. It is made by analyzing and extracting the volatile aroma components produced during the processing of corn into flour (including drying, grinding, etc.) and cooking of corn flour (such as making corn paste, corn cakes, etc.), and then blending it with various spices and additives.
Main ingredients:
Corn aroma components: Contains a variety of volatile compounds, such as aldehydes (such as hexanal and nonanal), which can provide the fragrance of corn itself. At the same time, during the heating process of corn, sugars, amino acids and other components in corn react to produce furan compounds (such as 2-pentylfuran) and pyrazine compounds (such as 2-methylpyrazine), which can provide roasted and nutty aromas and are important components of the aroma of corn flour.
Starch aroma components (may be): Corn flour contains a lot of starch. During the processing, starch may react to produce special aroma components. For example, during the heating process, the degradation and caramelization of starch may produce some compounds with sweet and roasted aromas, such as maltol, which add color to the overall aroma.
Other flavor ingredients: In order to enhance the flavor of corn flour flavor, some other flavor ingredients may be added.
