Fresh aroma ingredients:

Nitrogen-containing compounds: such as amine substances such as trimethylamine and dimethylamine. These ingredients are one of the key factors for the freshness of seafood, especially in fresh fish and shellfish. The content is high, which can provide the typical fresh aroma of seafood.

Nucleotides: Nucleotides such as inosinic acid and guanylic acid and their derivatives are closely related to the freshness of seafood, and play a role in enhancing the fresh aroma in seafood flavors.

Amino acids: Amino acids such as glutamic acid and aspartic acid. These ingredients are not only an important source of freshness, but also can produce a variety of aromas when heated or reacted with other ingredients, increasing the layering of seafood flavors.
