Product Information
Stevioside is a natural sweetener extracted from the leaves of Stevia rebaudiana, a plant of the Asteraceae family. Stevia is native to Paraguay and Brazil, and its leaves contain a variety of sweet ingredients, mainly steviol glycosides. Steviosides include stevioside, rebaudioside A, rebaudioside B and other ingredients, and their sweetness varies.
Physical and chemical properties
Sweetness: Stevioside is very sweet, about 200-300 times that of sucrose. Among them, rebaudioside A has the highest sweetness, about 450 times that of sucrose. This high sweetness allows only a small amount to be used in applications such as food processing to achieve the required sweetness.
Solubility: Stevioside has good solubility in water, and the solubility varies at different temperatures. It can dissolve a certain amount at room temperature, and the solubility increases as the temperature rises. It can also dissolve in some organic solvents such as ethanol, but the solubility is relatively small.
Stability: Stevioside has good thermal stability and acid stability.
