Product Information

Stachyose is a naturally occurring tetrasaccharide and a functional oligosaccharide. Its chemical name is: α-D-galactopyranosyl-(1→6)-α-D-galactopyranosyl-(1→6)-α-D-glucopyranosyl-(1→2)-β-D-fructofuranosyl. It is an oligosaccharide composed of galactose, glucose and fructose.

Stachyose mainly comes from plants and is abundant in the rhizomes of Stachys and ground shoots of the Lamiaceae family. For example, the content of stachyose in the rhizomes of ground shoots can reach about 25%-30%. In addition, some legumes also contain a certain amount of stachyose.

Physicochemical properties

Solubility: Stachyose has good solubility in water and can form a transparent solution. This makes it easy to process and use in liquid products such as food and health products.

Sweetness: It has a certain sweetness, which is about 22% of sucrose, and can provide a milder sweetness for the product.
